Pumpkin Cake Recipe

Fall is here! We love this time of year. The colors of the changing leaves are so beautiful. There air is fresh and crisp. And there is nothing like the look of sheer delight on a child's face when he/she spots the first round, orange pumpkin of the year.
 Yes, the Autumn season is wonderful, so we would like to share one of our favorite recipes for this time of year. 

 Pumpkin Cake
                                     * 1 Yellow Cake Mix
                                     * 1/2 C Butter Melted
                                     * 3 Eggs
                                     * 1 Lg. Can Pumpkin Pie Filling
                                     * 1 Can Evaporated Milk
                                     * 1/2 C Brown Sugar
                                     * 3 T Butter Melted
                                     * Whipped Cream

Grease 9 X 13 inch pan. Preheat oven to 350 degrees. Pour cake mix into medium-sized mixing bowl. Take out 1 cup of cake mix and save for later. Mix the remainder with 1/2 cup melted butter and 1 egg. Press into bottom of pan. In a medium  bowl, mix pumpkin with 2 eggs and 2/3 cup canned evaporated milk. Spread over crust. Using one of the mixing bowls, pour in 1 cup reserved cake mix. Add brown sugar and 3 T butter, and stir together. Crumble on top of pumpkin mixture. Bake for 50 - 60 minutes.
 It is best to make cake the night before or in the morning to allow to cool completely. Serve with whipped cream.
